Artichoke Stuffed Dab Filet

1 lb Dab filets

1 cup of bottled or canned artichokes choppped (reserve ¼ cup liquid)

1 small white onion

4 cloves of garlic minced

¾ cup chicken broth

¼ cup white wine

Bread crumbs as needed

¼ cup chopped fresh herbs (oregano thyme chives)

 

Preheat oven to 350 degrees.

In a medium sized sauté pan cook the onion in ¼ cup of olive oil until it is browned and translucent. Add garlic and cook until soft.

Add white wine, artichokes, and chicken broth. Bring to a boil and remove from heat. Let the mixture cool and add breadcrumbs and herbs to create a stuffing.

Lay the dab fillets out flesh side down and season with salt and pepper. Place about 2 ounces of stuffing on the fillet and roll to stuff. Place the rolls into a baking pan and bake in oven until the internal temperature reads 140 degrees and the fish is cooked.
