Beer Battered Dogfish
1 lb Dogfish cut into 4 oz pieces
1 cup flour (and some for dredging)
1 ¾ cups your favorite beer ( Allagash white or Red ale)
1 t paprika
1 t ground coriander
1 T salt
1 t baking soda
1 t black pepper
¼ cup fresh dill chopped (optional)
Preheat your home deep fryer to 350 degrees
Combine all dry ingredients and mix thoroughly
Add beer and slowly mix to incorporate. Don’t overmix
Dredge the dogfish pieces in flour then into batter
Slowly drop the battered fish into the hot oil using a metal fork
Cook for 8-13 minutes or until the batter is golden brown and crispy
