NHCS Newsletter: FALL WEEK 13: FLOUNDER

Eat Fresher Fish. Support Our Local Fishing Industry.
Welcome to Week 13 of our Community Supported Fishery (CSF), starting on Monday! We have four weeks left in this session, which goes until Week 16, ending on the week after Christmas. Then we take 3 months off to regroup, develop a new and improved website and change our antique software to something more user friendly!! We will start back in April 2021!
The Catch of the Week is Flounder, an iconic New England fish and great for any fish recipe!
Important things to remember:
- We are a cooperative, with fishermen and consumer Shareholders. We pay all our coop fishermen and harvesters a fair market price plus, for fish, a .50/lb incentive on all purchases!
- You can always check in on your Member status, orders you have made and Pick up location changes and balances at our Member login here
- You cannot substitute haddock for the Catch of the Week, you must pre-order the haddock
CATCH OF THE WEEK-FLOUNDER
Our Flounder Catch this week will be primarily Winter Flounder, aka "Blackbacks".
The Winter flounder or "Blackbacks", got their name because of their migrations-in winter. Adults migrate from offshore areas where they feed to inshore areas like bays and estuaries, where they spawn. This is also a right eyed flounder. Winter flounder has a sweet taste and firm texture and is often the standard to which other flounder species are compared. Winter flounder absorbs seasoning and marinades readily and cooks up great on the grill.
KNOW YOUR FISHERMEN
Your Fisherman this will be a Guestboat from New Bedford or Gloucester Massachusetts. Please check our FB page on Monday for details. Our NH fishermen catch limited Flounder this time of year and we rely on our friends from Mass for these fish!
COOKING INSTRUCTIONS
Cooking with Flounder is a delicate process. We like to remind all our members of the Cardinal rule for cooking any fish: Cook fish 10 minutes per inch of thickness. These fillets will be very thin, so just a few minutes each side will do!
Here are some great flounder recipes from our Pinterest Page here . Flounder is light and thin and must not be overcooked or it will have the consistency of a bicycle tire.
RESTAURANT SUPPORTED FISHERY

We work with Three River Farmers Alliance to reach a wide variety of Restaurants, Retailers and Institutions for our RSF program.
