Ingredients 1 lb. haddock fillets 1 tbs. lemon juice 2 eggs 1 tbs. mayonnaise 1/2 cup flour 1/2 tsp. salt 1/4 tsp. black pepper 1 cup panko bread crumbs 1 tbs. Italian seasoning 1 tbs. olive oil Directions Drizzle fillets with lemon juice and set aside for 20 minutes. Whisk eggs and mayonnaise until creamy. Season flour with salt and pepper. Combine panko and Italian seasoning. Drizzle with olive oil and mix well. Remove excess moisture from fillets with a paper towel. Lightly dredge fillets in flour, dip in egg mixture and coat with oiled panko. Air-fry at 400°F for 6 minutes until light golden brown.
